Winter Menu Launch: Edgar’s Bistro Returns with Southern Flair and New Leadership

Edgar’s Bistro, the beloved student- and faculty-chef-run restaurant operated by Helms College’s Polly Long Denton School of Hospitality, will reopen for Winter Quarter lunch service on Tuesday, January 28, 2026, with hours from 11:00 a.m. to 2:00 p.m., Wednesday through Friday, until March 27.
This quarter’s menu celebrates contemporary Southern cuisine, handcrafted each season by culinary instructors and students. Guests can expect inventive dishes with regional flair, such as:

This reopening also marks a new chapter at Edgar’s Bistro with Chef Lane Richardson stepping in to lead the student culinary team. A Helms College graduate and former head chef at Macon’s acclaimed Dovetail restaurant, Chef Richardson brings deep expertise and a passion for mentoring students in the kitchen where he once trained.
“Chef Lane is a powerful example of the mission in action, an alumnus who’s come full circle to guide the next generation,” said Kris Furtaw, Senior Vice President of Education Operations for Helms College. “His leadership will carry on the legacy of excellence and creativity our guests have come to expect.”

Edgar’s Bistro operates as a living classroom where culinary and hospitality students gain real-world experience in a professional setting. The restaurant’s reopening follows a major achievement: Helms College’s Polly Long Denton School of Hospitality was recently ranked among the Top 10 culinary programs in the U.S. by Niche.com.
