At Cantina Letty, service runs like clockwork — literally. Eight robots glide between tables, delivering steaming plates of Mexican food to diners who came for the cuisine but stayed for the innovation.

The technology was born from necessity when founder Letty Short underwent knee and hip surgery six months ago, leaving her unable to walk without a walker or serve tables at the restaurant she had operated for a year and a half.
